Crock Pot Taco Soup



Ingredients:

  • 1 lb. ground beef or turkey
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (4 oz) can diced green chilies
  • 2 cups beef or chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • Toppings (optional), such as sour cream, cheddar cheese, avocado, cilantro

Instructions:

  1. In a large skillet over medium-high heat, brown the ground beef or turkey until fully cooked. Drain any excess fat.

  2. Add the onion, bell pepper, and garlic to the skillet and cook for about 2-3 minutes, or until softened.

  3. Transfer the meat mixture to a crock pot.

  4. Add the diced tomatoes, black beans, corn, green chilies, beef or chicken broth, chili powder, cumin, paprika, salt, and pepper to the crock pot. Stir to combine.

  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.

  6. Taste and adjust the seasoning as needed.

  7. Ladle the soup into bowls and add desired toppings.

  8. Serve and enjoy!

Note:

  • You can also cook this on stovetop, In a large pot on medium heat, add all ingredients, bring it to a boil then simmer for 15-20 minutes.
