Chinese Fried Rice



Ingredients:

  • 2 cups cooked white rice
  • 2 eggs
  • 2 green onions
  • 2 cloves of garlic
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 1/2 cup diced cooked ham
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • salt and pepper to taste

Instructions:

  1. Heat a wok or large skillet over medium-high heat.
  2. Add the vegetable oil, swirling to coat the bottom of the pan.
  3. Once the oil is hot, add the beaten eggs and scramble until set. Remove the eggs from the pan and set them aside.
  4. Add garlic and green onions, stir-fry for a few seconds until fragrant.
  5. Add diced carrots, frozen peas and diced cooked ham, stir-fry for a minute or until they are heated through.
  6. Add the cooked white rice and stir-fry for 2-3 minutes, breaking up any clumps of rice as you go.
  7. Pour soy sauce over the rice mixture and stir-fry for an additional minute, or until the rice is evenly coated and heated through.
  8. Add the scrambled eggs and stir-fry for another minute to combine.
  9. Season with salt and pepper to taste.
  10. Serve hot and enjoy your Chinese Fried Rice!

Note:
You can add diced chicken, shrimp or beef for more protein, also you can add other vegetables like diced bell peppers, mushrooms, bamboo shoots or water chestnuts.
