Ingredients:
- 2 cups cooked white rice
- 2 eggs
- 2 green onions
- 2 cloves of garlic
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 1/2 cup diced cooked ham
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- salt and pepper to taste
Instructions:
- Heat a wok or large skillet over medium-high heat.
- Add the vegetable oil, swirling to coat the bottom of the pan.
- Once the oil is hot, add the beaten eggs and scramble until set. Remove the eggs from the pan and set them aside.
- Add garlic and green onions, stir-fry for a few seconds until fragrant.
- Add diced carrots, frozen peas and diced cooked ham, stir-fry for a minute or until they are heated through.
- Add the cooked white rice and stir-fry for 2-3 minutes, breaking up any clumps of rice as you go.
- Pour soy sauce over the rice mixture and stir-fry for an additional minute, or until the rice is evenly coated and heated through.
- Add the scrambled eggs and stir-fry for another minute to combine.
- Season with salt and pepper to taste.
- Serve hot and enjoy your Chinese Fried Rice!
Note:
You can add diced chicken, shrimp or beef for more protein, also you can add other vegetables like diced bell peppers, mushrooms, bamboo shoots or water chestnuts.
